Peanut Butter Chocolate Chunk Ice Cream

Today in New Hampshire the temperature reached 77 degrees! And what goes better with warm weather than ice cream!

I've been thinking of making this flavor for a long time: Peanut Butter ice cream with Chocolate Chunks!



First, as always, I make my sweet cream base. This is an unbelievably creamy and delicious ice cream. Chill this over night.

Then I made the following Peanut Butter mixture:

1/2 cup peanut butter
1/2 heavy cream
2 tablespoons sugar
1/4 cup light brown sugar

Add all ingredients to a sauce pan and heat slowly over low heat. Stir constantly until smooth and all the sugar has dissolved.

Chill over night along with the sweet cream base mixture.

To make the ice cream in your ice cream maker:
Once both mixtures have chilled, add the sweet cream base to the ice cream maker. When there is about 5 minutes left add the peanut butter mix. Add broken chocolate bar pieces at the very end.

Chill the ice cream for several hours before serving.
