New Year's Eve Ice Cream

For New Years Eve this year I made a Malted Vanilla Ice Cream with Chocolate Caramel Chunks along with homemade waffle cone bowls - wow ... delicious!


The ice recipe is as follows:

First, I made my own Ice Cream Base - a super rich and creamy mixture I developed for all my ice creams.

Next, after cooling the mix overnight in the 'fridge, I added vanilla and 6 tablespoons of Carnation Malted Milk mix and whisked it thoroughly. I added the mix to my ice cream maker and started churning.


While that was going, I chopped up some Hershey's Chocolate Caramel bars to mix in later.

One of the best ice creams I've made! Plus with the homemade waffle cone bowls, all I can say is WOW!

Butter Crunch Ice Cream Recipe

I get many visits to this site, which I appreciate. One of the biggest draws to this site is my Butter Crunch Ice Cream picture, posted on Flickr. For no real reason, I never got around to posting the recipe - until now.

For this ice cream, I wanted to make a homemade Butter Crunch candy and found an outstanding recipe for "English Toffee" (AKA Butter Crunch) on the "Cooking For Engineers" website (which was perfect, since I am an engineer!). They describe the process of making toffee in such a way that anyone can make it.



I made the candy the day prior to making the ice cream, to allow it to fully cool.

I followed their recipe up through spreading the toffee to cool, skipping adding the
chocolate (since I only wanted the butter crunch part). You can decide how far you'd
like to go. I did sprinkle in the almonds before it cooled. Follow their directions for cooling as well.

Ingredients for Butter Crunch
1 cup sugar
1/2 cup chopped almonds
1 teaspoon vanilla extract
1/8 teaspoon salt
1 cup butter

Follow the recipe on "Cooking For Engineers" to complete the candy.

Ice Cream:

For all of my ice cream recipes I developed my own Ice Cream Base - a rich, creamy base that makes incredibly delicious ice cream. For this butter crunch recipe, I also added 4 tablespoons of melted butter before cooling. I wanted to make sure I had a nice rich buttery flavor.

Cool the mixture well, at least over night, in the refrigerator.

Once cool, stir the mixture well, and add to your ice cream maker. While the ice cream is churning, break up the butter crunch candy into small pieces. When there are
around 5 minutes left, add in the broken pieces of butter crunch candy.

Key Lime Pie flavor

This weekend I made Key Lime Pie flavor ice cream - and received rave reviews from my family. My wife says out of all the flavors I've made, this is her favorite.

Homemade Key Lime Pie Ice Cream

To make this, first make my Sweet Cream Base, then after the mix is good and chilled, simply add 3 oz. of Mrs. Biddle's Key Lime juice when adding to the ice cream maker.

Serve with Nilla Wafers (as I've done here) or graham crackers if you'd like.

Peanut Butter Chocolate Chunk Ice Cream

Today in New Hampshire the temperature reached 77 degrees! And what goes better with warm weather than ice cream!

I've been thinking of making this flavor for a long time: Peanut Butter ice cream with Chocolate Chunks!



First, as always, I make my sweet cream base. This is an unbelievably creamy and delicious ice cream. Chill this over night.

Then I made the following Peanut Butter mixture:

1/2 cup peanut butter
1/2 heavy cream
2 tablespoons sugar
1/4 cup light brown sugar

Add all ingredients to a sauce pan and heat slowly over low heat. Stir constantly until smooth and all the sugar has dissolved.

Chill over night along with the sweet cream base mixture.

To make the ice cream in your ice cream maker:
Once both mixtures have chilled, add the sweet cream base to the ice cream maker. When there is about 5 minutes left add the peanut butter mix. Add broken chocolate bar pieces at the very end.

Chill the ice cream for several hours before serving.

Sugar Plum Swirl Ice Cream recipe

For Christmas I made the Sugar Plum Swirl Ice Cream I mentioned the other day. It came out great!

Here is the recipe:

First, make my Sweet Cream Base.

Next, after whisking in the Vanilla, add to the Ice Cream maker "following manufacturer's instructions."

While the ice cream is being made, put the Sugar Plum Jam (from Stonewall Kitchen) in a bowl so that it will be easier to work with.

Then, when the ice cream is complete, transfer it to the dish you plan to freeze it in, and swirl in the Sugar Plum Jam.

Freeze at least a few hours, preferably overnight.

Serve with a sugar cookie.

Sugar Plum Swirl Ice Cream

This year for Christmas I will be making Sugar Plum Swirl Ice Cream. I will be using Sugar Plum Jam from Stonewall Kitchen, which I discovered for the first time this year.

First I will make vanilla ice cream using my nearly famous sweet cream base. Then when the ice cream is finished in the ice cream maker, I will add the Sugar Plum Jam - stirring it in as a ripple just before freezing.

I plan to serve it with Sugar Cookies.

Yum! Sugar Plum Swirl Ice Cream! I will follow up after making it with a picture or two.

My Sweet Cream Base for homemade Ice Cream

Here is how I make it:

Ingredients:

1 cup sugar
2 eggs, beaten
1 1/2 cups half-and-half
1 cup heavy cream
1 teaspoon vanilla extract

Stir the sugar and half-and-half together in a saucepan. Heat slowly over medium-low heat stirring frequently. When this mixture starts to simmer, remove from heat.

While the sugar and half-and-half are heating, combine the beaten eggs and heavy cream in a mixing bowl. Whisk them up well.

After removing the sugar and half-and-half from the heat, slowly add small amounts to the egg and cream mixture, stirring constantly. Add a little of the warm mix at a time so you do not scramble the egg mix. Take your time. Keep adding the warm mix to the egg and cream mix until you have added it all, stirring the whole time.

Put the combined mixture into the saucepan, and heat again over medium-low heat, stirring constantly. Stir until it is thick enough to coat the back of a metal spoon.

Remove from heat. Refrigerate overnight.

Whisk in the vanilla just before adding to your ice cream maker.

Cinnamon Ice Cream

For Thanksgiving I made Cinnamon Ice Cream, using the recipe for the Cinnamon Snickerdoodle Chunk ice cream I made last March. This time I didn't add the cookie chunks because I wanted it to be something people would want with my homemade pumpkin pie.

It was outrageously good!

Summer Peach Ice Cream

Here is how I made my Summer Peach Ice Cream :

Ingredients:

1 cup sugar and a separate 1/3 cup sugar (for the peaches)
2 eggs, beaten
1 1/2 cups half-and-half
1 cup heavy cream
1 teaspoon vanilla extract
2 fresh ripe peaches
1/2 lemon

This is my nearly famous cream base:
Stir the sugar and half-and-half together in a saucepan. Heat slowly over medium-low heat stirring frequently. When this mixture starts to simmer, remove from heat. Careful not to boil.

While the sugar and half-and-half are heating, combine the beaten eggs and heavy cream in a mixing bowl. Whisk them up well.

After removing the sugar and half-and-half from the heat, slowly add small amounts to the egg and cream mixture, stirring constantly. Add a little of the warm mix at a time so you do not scramble the egg mix. Take your time. Keep adding the warm mix to the egg and cream mix until you have added it all, stirring the whole time.

Put the combined mixture into the saucepan, and heat again over medium-low heat, stirring constantly. Stir until it is thick enough to coat the back of a metal spoon.

Remove from heat, and let cool at room temperature for about an hour. Refrigerate overnight.

To prepare the peaches:
Peel the peaches, remove the pits, and cut up into 1/2 sized chunks. Place in a mixing bowl with the 1/3 cup sugar and mix up well. Squeeze the juice from the lemon in, mix again and refrigerate for a couple hours.

Now that the peaches have started making juice - place them in a food processor and pulse in short bursts until they are just small bits. Pour them through a strainer to separate out the juice from the pulp.

Make the ice cream:
Add 1 teaspoon of vanilla to the chilled ice cream mix (adding it just before putting the mix in the ice cream maker ensures the best taste).

Add the juice from the peaches to the ice cream mix and whisk thoroughly - saving the peach pulp to the side to add near the end.

Add to your ice cream maker and follow the manufacturer's instructions. When the ice cream is nearly done, add in the peach pulp and there you have it: my recipe for homemade Summer Peach ice cream!

My amazing wife made an outstanding fresh raspberry sauce to go with it - turning it all into peach melba - yum!

New York Super Fudge Chunk

My daughter requested that I make homemade New York Super Fudge Chunk ice cream for her birthday - so I did.

I knew I needed to get good ingredients, since the Ben and Jerry's version contains White & Dark Fudge Chunks, Pecans, Walnuts & Fudge Covered Almonds - so I went to The Chocolatier in Exeter NH again (when I made "Box of Chocolates" ice cream).

They helped me pick out some chocolate fudge, plus some white-chocolate almond bark, and some chocolate pecan bark.

I made a rich chocolate base, and put the broken bark in near the end of the process. I added large chunks of fudge by hand as I was scooping it into the bowl and before putting it into the freezer.

It came out great!

The Original Flavors I have created so far!

Here is a list of all the different homemade ice cream flavors I have made so far:

Strawberry Garcia - strawberry ice cream loaded with chocolate chips

French Vanilla Grapenut - simple but delicious

"Mud Season" - mocha ice cream (chocolate and coffee), chunks of Pepperidge Farms Brownie Cookies, a ripple of chocolate fudge and some crushed cookie crumbs to achieve the "dirt" effect!

Cinnamon Snickerdoodle Chunk - combining the delicious Snickerdoodle cookies from Pepperidge Farms with a Cinnamon ice cream base

"Box of Chocolates" - peanut-butter filled chocolate hearts, some dark chocolate, some milk chocolate all from the Chocolatier in Exeter NH - in a chocolate ice cream base

"Hershey's Almonds and Toffee Symphony bar" - think "Heath Bar Crunch" ice cream ...

Mocha Chocolate-chip - another simple but delicious combination!

Chocolate Peanut Butter Bar - wicked good!


"Apple Crisp" - one of my first creations - wow it's good!

my recipe for Homemade Strawberry Garcia Ice Cream


Here is my recipe for Strawberry Garcia Ice Cream (strawberry ice cream loaded with chunks of chocolate):

    Ingredients:

    1 cup sugar and a separate 1/3 cup sugar (for the strawberries)
    2 eggs, beaten
    1 1/2 cups half-and-half
    1 cup heavy cream
    1 teaspoon vanilla extract
    1 pint strawberries
    1/2 lemon (or lime - which ever you prefer)
    3 Hershey's Special Dark Chocolate bars, broken into chunks

This is my nearly famous cream base:
    Stir the sugar and half-and-half together in a saucepan. Heat slowly over medium-low heat stirring frequently. When this mixture starts to simmer, remove from heat.  Careful not to boil.

    While the sugar and half-and-half are heating, combine the beaten eggs and heavy cream in a mixing bowl. Whisk them up well.

    After removing the sugar and half-and-half from the heat, slowly add small amounts to the egg and cream mixture, stirring constantly. Add a little of the warm mix at a time so you do not scramble the egg mix. Take your time. Keep adding the warm mix to the egg and cream mix until you have added it all, stirring the whole time.

    Wash the strawberries, trim off the tops and cut each into 4 or 5 slices.  Place in a mixing bowl with the 1/3 cup sugar and mix up well.  Squeeze the juice from the lemon in, mix again and refrigerate for a couple hours.

    Now that the strawberries have started making juice - place them in a food processor and pulse in short bursts until they are just small bits.  Pour them through a strainer to separate out the juice from the pulp.

Make the ice cream:
